As Executive Chef for Ultima Gstaad, Chef Andrea Franceschi lovingly curated a menu using seasonal ingredients that make delicate but bold statements on the plate.

Our autumn menu has been curated by head chef Andrea Franceschi. He sources seasonal and naturally grown ingredients to surprise even the most loyal of diners, from Swiss Salmon tartar with fragrant Asian herbs, to homemade ravioli with a warming sage sauce.

Chef Andrea Franceschi does not have a signature dish, yet his statement style is undeniable. Dishes fit for an art gallery are delivered with unexpected twists. From our ever-popular Gyozas with a punchy ponzu sauce, stuffed chicken with black truffle, to seared Amberjack fillet with lemon yuzu flavours, his dishes not only deliver in flavour but are a visual treat.
